Artichokes

Artichokes are low in calories and ideal for dieters. They are a delicious delicacy which can be served as appetizer, but only the tender leaf bases and more nutritious central heart are edible. They are one of the richest vegetables sources of  a range of minerals, including calcium , iron, magnesium and potassium. They are also high in fibre and contain a compound called  cynarin known for boosting liver function.

Artichokes  are a good source of vitamin C and folate

  • 4.2 g protein
  • 13.4 g carbohydrate
  • 6.5 g fibre
  • 12 mg  vitamin C
  • 65 mcg folate
  • 425 mg potassium
  • 72 mg  magnesium
  • 54 mg calcium
  • 1.5 mg iron
  • 557 mcg lutein/Zeaxanthin
