They are a delicious delicacy which can be served as appetizer, but only the tender leaf bases and more nutritious central heart are edible. They are one of the richest vegetables sources of a range of minerals, including calcium , iron, magnesium and potassium. They are also high in fibre and contain a compound called cynarin known for boosting liver function.
